Filipino Chef Behind Viral ‘Dubai Chocolate’ Unveils New Abu Dhabi-Inspired Flavour
Following the global success of the viral Dubai Chocolate, Filipino dessert specialist Chef Nouel Catis has unveiled his latest creation — Abu Dhabi Chocolate, a luxurious confection inspired by the capital’s culture, flavours, and traditions.
Chef Catis, who gained fame for co-creating the pistachio-kunafa-filled Dubai Chocolate that captivated taste buds and social media feeds alike, described his newest creation as “a tribute to the soul of the city.”
“I created the Abu Dhabi Chocolate as my way of paying homage to the UAE, a place I have long considered my second home,” said Chef Catis. “This bar continues my mission of crafting chocolates that honour the country’s most iconic cities, each telling a flavour story rooted in place.”
Moving beyond conventional chocolate flavours such as vanilla, hazelnut, and pistachio, the Abu Dhabi Chocolate blends ingredients deeply tied to Emirati culture — including saffron and cardamom for aromatic depth, tahina and dates for an earthy sweetness, and a nostalgic crunch to evoke cherished memories.
Each bar is delicately wrapped in edible gold filigree, balancing elegance and tradition, and features salted caramel chocolate to appeal to younger consumers while preserving regional authenticity.
“Each ingredient was chosen with purpose — to echo the hospitality, warmth, and cultural richness that define Abu Dhabi,” said the chef.
The Abu Dhabi Chocolate is being launched in collaboration with Rain Café, a homegrown Emirati brand that will serve as the exclusive outlet for the product. The chocolate is now available at Rain Café’s Muroor and Yas Mall branches, with online sales set to open later this week.
A spokesperson from Rain Café noted that the partnership was a natural continuation of the brand’s long-standing collaboration with Chef Catis.
“Rain is the point of sale only. Given our past projects with Chef Nouel and our strong presence in Abu Dhabi, he chose Rain as the exclusive outlet,” said the spokesperson. “Demand has been excellent since launch, with orders pouring in from across the UAE.”
With this launch, Chef Catis aims to continue his culinary mission of blending artistry, nostalgia, and innovation — celebrating the UAE’s cities through taste.
